OK, so usually, I’m the food innovator in our family, but I have to hand it to my husband. He came up with what you see in this post. Genius, I tell you! I have been testing out a gluten, dairy, nut, soy and egg-free peanut butter cookie (I know, it sounds impossible, but I really made it happen, I swear), so I brought some extras home. He took some vanilla Turtle Mountain Purely Decadent ice cream (http://www.purelydecadent.com/products/purely_decadent_Coconut_Milk.html), sandwiched it between two “Forget about Peanut Butter” cookies and voila, an instant, allergen-free Chipwich! Needless to say, I, once again, ate myself into a food coma. Hence the photo of the half eaten ice cream sandwich– I couldn’t get it away from myself long enough to photograph it intact. Delicious!
